Our Contemporary Australian Dinner at HEH Restaurant promises to be an evening of culinary exploration and camaraderie.

Chef Oat, with a rich background that includes catering for prestigious events like the Australian Open and the Australian Formula 1 Grand Prix, brings a touch of Melbourne’s trendy and diverse cuisine to the heart of the Andaman. HEH Restaurant is proud to showcase the Andaman’s most exquisite catches, promising a night of irresistible temptations.

The team is led by Chef Oat, Nattaphon Othanawathakij, a chef turned Thai national snowboarder, turned chef. Oat lived in Melbourne for 10 years, working in both casual and fine dining restaurants, and catered for the Australian Open, Formula 1 Australian Grand Prix, and the Melbourne Cup Carnival. He came back to work for several years at a No.5 “World’s 50 Best  restaurants” and a No.1 in “Asia’s 50 Best Restaurants” before deciding to settle in Phuket. Fascinated by endless opportunities of the vast Andaman Sea, he and his business partners established HEH in 2019.
In 2021, he took his team to gain victory as a Winning Challenger Chef at The Iron Chef Thailand.

HEH triggers curiosity. It’s a space to explore energy and creativity. In keeping with the concept of the restaurant, the menu is served sharing style and draws inspiration from Melbourne – a city of diverse, trendy and very tasty food. Wines are made with as little intervention as possible.

Dress code – Jacket’s optional for men, no jeans, with Chaine ribbon.

About the wines:

2021 UIVO PET NAT Branco, Folias de Baco, Douro, Portugal
Varietals: Bical (25%), Arinto (25%), Rbigato (25%) Moscatel Galego (15%), Alvarinho (10%)
The vineyards are located in the sub-region of Cima-Corgo (Alijó) at an average altitude of 600 metres, growing in schist and granite derived soils. No maceration, whole-cluster pressed, fermentation: 3 weeks in stainless steel with temperature control. Made from only one fermentation, without added yeasts or sugar, unfined and unfiltered, residual sugar: 2 g/l Pale yellow colour, cloudy. Very delicate bubbles. Exuberant aroma, filled with ripe tropical fruits and wild flowers. Medium bodied, with a delicate acidity lingering in the mouth. A young and seductive wine. ORGANIC/NATURAL.

2019 Pinot Gris, Kracher, Burgenland, Austria
Varietal: Pinot Gris (100%)
Fermented and matured for 7 months in stainless steel tanks. Pale green-yellow. Fine fresh apple fruit, honey melon and a hint of wild herbs. On the palate juicy, elegant texture, white tropical fruit aromas, discreet acidity. Fresh citrus flavours and pleasant minerality on the finish. SUSTAINABLE.

2021 Grüner Veltliner Alte Reben, Sohm & Kracher, Weinviertel, Austria
Varietal: Grüner Veltliner from vines 25-50 years old located in the Pulkau Valley in the Weinviertel north of Vienna.
Macerated longer than the Lion but from the same origin and partly aged in oak barrels, this is a more Austrian – and more ambitious – Veltliner with ripe and concentrated white fruit aromas and iodine notes. ORGANIC.

2021 Peraj Petita, Celler de Capçanes, Montsant DO, Spain 
Varietals: Grenache (55%), Tempranillo (20%), Merlot (15%), Samsó (10%)
Medium ruby with flecks of violet; fresh, seductive aromas of red berries and cherry; loads of red fruits in taste; crispy and ripe, concentrated and well-balanced but not over-powered; very Garnacha in character  and mineral in taste; fruit and minerality plus some elegant glycerin-sweetness; medium finish with crispy but soft tannins. ORGANIC.

Vermut de Capçanes, Celler de Capçanes, Monsant DO, Spain
Varietals: Grenache Blanc and Macabeu
Dark chestnut and caramel colour. Gentian, elderflower and sage aromas. A good body on the palate, soft sweetness, pleasant bitterness and a very balanced structure, that invites you to drink it on its own or with ice. ORGANIC.
